We realised tasting objectively wasn’t helping us recapture that feeling of tasting mezcal at the still. We call this Emotional Tasting. Instead of reaching for technical jargon, we want our guests to access their own memories of flavour.
We do this via The Kernel - an ear worm, a memory collector, a mind connector. It’s a 3 word description; part poem and part tasting note. It’s a nickname; something to make it memorable and to act as the jumping off point in the journey of the guest.
